
I made some 
almond ricotta using the recipe from 
Vegan.com     You have to scroll down two thirds of the page to find it.  I wanted to try this recipe because it is soy free.  I didn't have any lemons so I substituted malt vinegar and it still taste tested totally scrummy.
I was planning on making ricotta, spinach and tomato lasagne but I was feeling a bit iffy today.  Hopefully, I will feel better tomorrow.
